El lúpulo Nelson Sauvin, llamado así en honor a su patria, tiene un perfil aromático similar al de la uva de vino Sauvignon Blanc, igualmente "famosa en Nueva Zelanda". Abundan los sabores a fruta de la pasión, grosella, melocotón y lima. Algunos cerveceros detectan toques de kiwi y maracuyá.
